When using Adobe Illustrator how to and when to convert text to outlines for press-ready vector artwork is essential knowledge. Fonts can cause problems when sending artwork to press. If you've used a typeface that your printing house doesn't have, the document will print incorrectly.
This is why you'll find that fonts within most vector logos containing text will have been converted to outlines, or paths. This effectively means that the text is no longer text - it has become a graphic, and the text cannot be altered.
Converting text to outlines is very easy in Illustrator. The "PRO" text in the graphic shown below left has a blue line underneath it. This shows that the text is made up of a typeface, not a graphic. The little blue square at the left end of the line indicates that the text is ranged left. If the type were centred, the little square would be in the middle of the line. It's good practice to keep an editable copy of your document as an AI file before you convert text to outlines and save the file as an Illustrator EPS file.
This is so that you can come back and edit it non-destructively later, instead of having to recreate the artwork with text again. It doesn't matter if other graphic elements are selected.
The text will become outlined and can't be edited as text see the image below right. Now, as you can see, the line beneath the text has gone. The text characters now have editable paths, or outlines, around them - they are no longer text, but vector graphics, and can be edited as such.

You can add on to an existing path but it seems you can only do this by extending the path from one of the endpoints. I don't want to do this: I want to continue the path from somewhere else. You can get something sort of like this by grouping two disjoint paths. If I manually edit an svg file with a text editor, adding "move to" commands, and I import them, it looks like maybe what Illustrator is doing is creating a group, but I can't tell because I don't know how to select and object and figure out if it is a group or not.
I think the only way would be to mak a compound path. If this doesnt work then its probably not possible. This is the only way i can think of in which a non-contiguous path would even exists as far as AI sees it.

The resulting paths or shapes differ depending on the method you use to combine the objects. Pathfinder effects let you combine multiple objects using interaction modes. See Combine objects using Pathfinder effects. Compound shapes let you combine multiple objects and specify how you want each object to interact with the other objects.
Compound shapes are more versatile than compound paths because they provide four kinds of interactions: add, subtract, intersect, and exclude. In addition, the underlying objects aren't changed, so you can select each object within a compound shape to edit it or change its interaction mode. See Combine objects using compound shapes. Compound paths let you use an object to cut a hole in another object.
For example, you can create a doughnut shape from two nested circles. Once you create a compound path, the paths act as grouped objects. You can select and manipulate the objects separately using the Direct Selection tool or Group Selection tool; or you can select and edit the combined path. See Combine objects using compound paths. Note: You can also add to an object by using the Blob Brush tool.
When you use this brush, paths you paint are added to adjacent paths that use identical fill attributes. Use the top row of buttons in the panel to make paths or compound paths. To make compound shapes, use the buttons in those rows while pressing the Alt or Option key. Exclude Overlapping Shape Areas. Uses the area of the component to invert the underlying geometry, turning filled regions into holes and vice versa. Use the bottom row of buttons in the panel, called Pathfinder effects, to create final shape combinations on the first click.
See Apply Pathfinder effects. Set Pathfinder Options from the Pathfinder panel menu or by double-clicking a Pathfinder effect in the Appearance panel. The more precise the calculation, the more accurate the drawing and the more time is required to generate the resulting path.
Deletes any unfilled objects in the selected artwork as you click the Divide or Outline button. Pathfinder effects let you create new shapes out of overlapping objects. Apply Pathfinder effects by using the Effects menu or the Pathfinder panel. Pathfinder effects in the Effects menu can only be applied to groups, layers, and text objects. After you apply the effect, you can still select and edit the original objects.
You can also use the Appearance panel to modify or remove the effect. See Apply a Pathfinder effect using the Effects menu. Pathfinder effects in the Pathfinder panel can be applied to any combination of objects, groups, and layers.
The final shape combination is created when you click a pathfinder button; after that, you can't edit the original objects.
If the effect results in multiple objects, they are automatically grouped together.Illustrator's pen tool lets you create vector images by placing a series of segments and anchor points on the artboard to define a path. When the path is closed, it becomes a shape. The anchor points define the angles and curves to draw smooth, clean and precise shapes that can be scaled to any size.
Illustrator also provides tools to break or split a path at any anchor point or along any segment to help you edit your artwork easily. Open the Illustrator document with the path you want to slice. Select the straight line of the path on the document, then click the scissors tool in the Tool palette. Click in the middle of the straight line to make a break in the path.
Two new endpoints will appear on the original path. Alternately, click on the anchor point of the path you want to split. Adding anchor points can give you more control over a path, or it can extend an open path. However, you should not add more points unnecessarily as it makes the path complex. A path with fewer points is easier to edit, display, and print. You can reduce the complexity of a path by deleting unnecessary points. These keys and commands also delete the line segments that connect to that point.
Stray anchor points are individual points that aren't connected to other anchor points. It's good practice to find and delete stray anchor points. To temporarily override switching, hold down Shift as you position the Pen tool over the selected path or an anchor point. This is useful when you want to start a new path on top of an existing path. To prevent Shift from constraining the Pen tool, release Shift before you release the mouse button.
You can convert the points on a path between corner and smooth points.
How to Fill Compound Paths in Illustrator
Use options in the Control panel to quickly convert multiple anchor points. Use the Convert Anchor Point tool to choose to convert only one side of the point, and to precisely alter the curve as you convert the point. To use the anchor point conversion options in the Control panel, select relevant anchor points only, not the entire object.
If you select multiple objects, one of the objects must be only partially selected. When entire objects are selected, the Control panel options change to those that affect the entire object. Select the Convert Anchor Point tool. Position the Convert Anchor Point tool over the anchor point you want to convert, and do one of the following:.
To convert a smooth point to a corner point with independent direction lines, drag either direction point. To convert a corner point without direction lines to a corner point with independent direction lines, first drag a direction point out of a corner point making it a smooth point with direction lines.
You can erase portions of your artwork using the Path Eraser tool, the Eraser tool, or the eraser on a Wacom stylus pen. This tool is useful when you want to limit what you erase to a path segment, such as one edge of a triangle. You can use the Eraser tool on paths, compound paths, paths inside Live Paint groups, and clipping paths. Select the Path Eraser tool. Drag the tool along the length of the path segment you want to erase. For best results, use a single, smooth, dragging motion.
When you flip a stylus pen, the Eraser Tool automatically becomes active.
